So, while I was in the bathroom, my Tamagotchi grew into adults. The matchmaker should be giving them options to marry, right? Well, she isn't. I go to the Dating Show and she yells at me again. What's happening? Do I have to wait a bit longer?

72 hours unpaused time as adults then you can do the dating show methinks.

Yup, TL's right, after 72hrs they'll evolve again into a type of family (for example, the ninja family) and then you can use the dating show. :3
